Cilantro Lime Fruit Salad

My youngest brother is leaving for Officer Candidate School (OCS) tomorrow. It’s hard to believe that he is old enough to become a Marine. I am extremely proud of him and I know he will do really well but of course it’s a little bittersweet. In honor of him shipping off to Virginia for 6 weeks we are going to have a little family gathering tonight. Nothing extravagant, just the parents and siblings. I decided to make a fruit salad…it’s yummy and very refreshing on a hot summer day. Like many we’ve had in the past couple weeks!

Cilantro Lime Fruit Salad

makes approx. 6 servings

2 oranges, cut into chunks
2 apples, diced
1 container strawberries, sliced
Grapes, cut in half (approx. 1/2 cup)

2 limes, juiced
1 tbsp. honey, more to taste
1 tbsp. cilantro

Mix lime, honey and cilantro in small bowl. Pour over fruit and let chill. Serve, enjoy!

Of course you can use any type of fruit you have on hand. The dressing would be delicious on watermelon or an assortment of berries.
